The Cookery School returns for a classic combo

Our Cookery School is back again for another lesson in lovely food. This time they were tackling how to make a satisfying chicken and halloumi burger. It might seem an easy dish on the surface, but to master it there are loads of tricks that only the talented chefs at the cookery school can teach.

Students gathered again at Boldrewood Innovation Campus to learn these new techniques, develop their cooking skills, and enjoy a hands-on experience in the kitchen.

Cookery School Episode 2 - Chicken and halloumi burgers

Chicken and halloumi burger recipe

Ingredients

For the burger:

  • 2 chicken breasts (or boneless chicken thighs for extra juiciness)
  • 100g halloumi, sliced into 2 pieces
  • 2 brioche buns (or any burger buns of your choice)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper

Toppings (optional, but recommended):

  • 2 tbsp mayo (or garlic mayo for extra flavour)
  • 1 tbsp sweet chilli sauce or sriracha (for a kick)
  • Lettuce leaves
  • 2 slices of tomato
  • Red onion slices

Method

1. Prep & season the chicken

  • Butterfly the chicken breasts (slice them in half lengthwise if they’re thick) to help them cook evenly.
  • Drizzle with olive oil and season with smoked paprika, garlic powder, salt, and black pepper.

2. Cook the chicken

  • Heat a frying pan or griddle over medium heat.
  • Cook the chicken for 5-6 minutes per side until golden brown and fully cooked through (internal temp 75°C).
  • Once cooked, remove and set aside to rest.

3. Fry the halloumi

  • In the same pan, add the halloumi slices (no oil needed!).
  • Cook for 1-2 minutes per side until golden and crispy.

4. Toast the buns

  • Lightly toast the brioche buns in the pan for 30 seconds to make them extra tasty.

5. Assemble the burger 🍔

  • Spread mayo on the bottom half of the bun.
  • Add lettuce, tomato, and red onion.
  • Place the grilled chicken on top.
  • Layer on the crispy halloumi and drizzle with sweet chilli sauce or sriracha.
  • Pop the top bun on and enjoy!
