This homemade take on a familiar favourite combines crisp, golden fish goujons with a tangy mayonnaise. It's simple, satisfying and perfect for an easy lunch or dinner.
The Recipe

Ingredients
For the fish goujons
- 2 sole fillets
- 30g plain white flour
- 50g panko breadcrumbs
- 1 egg, mixed with a dash of milk and a pinch of salt
- Vegetable oil, for frying
For the mayonnaise
- 200ml mayonnaise
- 3 tbsp capers, drained and chopped
- 3 tbsp gherkins, drained and chopped
- 1 small shallot, finely chopped
- A squeeze of lemon juice
- 3 tbsp fresh parsley, chopped
- Flaked sea salt and freshly ground black pepper
To serve
- Bread or sandwich rolls of your choice
- Salad leaves, optional
- Lemon wedges, optional
Method
STEP 1
Slice each fish fillet lengthways into four strips, then cut each strip in half diagonally to create approximately 16 goujons. Pat the fish dry and set aside.
STEP 2
Create a breadcrumb station with a dish of flour, a bowl containing the egg whisked with a dash of milk and a pinch of salt, a bowl of breadcrumbs and a clean plate for the coated fish.
STEP 3
Dust each fish goujon in the flour and tap gently to remove any excess. Dip the goujon into the egg mixture, followed by the breadcrumbs. Press the breadcrumbs down gently to create an even coating, then place the coated goujon on the clean plate. Repeat with the remaining fish.
STEP 4
To make the mayonnaise, combine the mayonnaise, capers, gherkins, shallot, lemon juice and chopped parsley in a small bowl. Season with flaked sea salt and freshly ground black pepper. Serve immediately or keep refrigerated until needed.
STEP 5
Place a large non-stick frying pan over a medium heat and add a dash of vegetable oil. Once the oil is hot, carefully place the goujons in the pan and fry until crisp, golden and thoroughly cooked. Cook for approximately one minute on each side, depending on the thickness of the fish.
STEP 6
Drain the cooked goujons on kitchen paper and sprinkle with a small pinch of salt. Arrange the goujons inside the bread or sandwich rolls and finish with the prepared mayonnaise. Add salad leaves or a squeeze of lemon juice, if desired.
